GLUTEN FREE APPLE CRISP RECIPE

This is my second attempt at making gluten free apple crumble and the second time around was much better. The first time I made gluten free apple crumble the topping wasn't the greatest. It was not crunchy but soggy.Needles to say it never made it to the blog.  We all know it's the toppings that makes apple crumble so good!
I'm very happy with the way this one turned it out. It was just the right amount of crispness on the top. It's good enough to share. But I'm always looking to improve on the recipes I've created; even the ones that taste good. I'm happy to share this recipe. Feel free to share with gluten free apple crisp lovers.


APPLE CRISP TOPPING

1 cup Gluten Free Certified oats (I used Red Mill)

1 cup 1 to 1 gluten free flour

1/2 cup brown sugar

1/2 cup granulated sugar

1/2 cup cold unsalted butter, diced into small cubes

2 tbsp of cold coconut oil

1 1/4 Tsp ground cinnamon

1/4 tsp allspice

1/4 Teaspoon sea salt

APPLE FILLING

6 Gala apples cut into cubes. You can also use pre made apple pie filling if you prefer.

2 tbsp granulated sugar

1 1/2 tsp lemon juice

1/2  tsp ground cinnamon

DIRECTIONS

Preheat oven to 350 F degrees.  Have a pie dish (or whatever you prefer to bake in) set aside for combined ingredients.

Mix apples, granulated sugar, 3/4 tsp of the cinnamon and lemon juice together in a bowl.

In another bowl, mix dry topping ingredients. Combine gluten free flour, gluten free oats, cinnamon, allspice until ingredients are well mixed.

Use kitchen knife (you can use a pastry cutter too) to cut the butter into the dry mixture. Add cold butter and cold coconut oil to the dry mix. Combine together until mixture is crumbly.

Spread topping over apples into the pie dish. Spread topping evenly to cover apple filling. Bake for approximately 40 - 45 minutes.
