GLUTEN FREE QUICHE RECIPE




Filing:

4 Eggs
1 Cup Milk
1/4 Condensed Milk
1/4 Tsp Sea Salt
1/4 Tsp Ground Black Pepper
1 Chopped Onion
1 Chopped Red Pepper
1/4 Chopped Broccoli
1/2 Cup Feta Cheese
1 Cup Grated Mild Cheddar Cheese

Crust:

1 1/2 Cup Gluten Free Flour
1/4 Cup Olive Oil
1/2 Cup Unsalted Butter
1/2 Tsp Sea Salt
1/4 Cup Ice Cold Water

PREPARATION
Mix flour, sea salt, olive oil and butter together in a bowl. Once they're well mixed add ice cold water. Mix well and knead dough. Roll it out on parchment paper and freeze for an hour.
Remove dough and use rolling pin to flatten the dough as smooth as possible. Place dough into pie pan and shape it to your liking. Preheat oven to 350 degrees. Place crust in oven and para bake until its lightly very golden for approx 25 to 35 minutes.
Note: Do not let it get to a deep gold colour it'll burn while you're baking the filling.
Sautee only 1/2 the onions and red pepper and set aside.
Mix the eggs, milk, condensed milk, salt pepper, onions, feta cheese and 3/4 of the grated cheddar together. Set the rest of the cheese aside. Once ingredients are mixed together. Add sauteed red pepper and onions.
Pour combined ingredients into pre baked crust. Sprinkle left over cheese on top and bake in oven for 30 to 40 minutes.
This dish is great for breakfast, lunch, brunch or dinner. Enjoy!
